Tegemist on \u00fche k\u00f5ige kallihinnalisema lihaga maailmas. \u00dcks kilo Wagyu veiseliha v\u00f5ib Londoni lihaturul maksta kuni sada naela. Eestis kasvatatud Wagyu liha m\u00fc\u00fcdi 2020.aastal maha hinnaga <strong>90\u20ac\/kilo<\/strong> ja l\u00f5viosa kodumaisest loomalihast m\u00fc\u00fcdi \u00e4ra <strong>alla kahe tunniga.<\/strong> Kui tahaksid aga osta tervet looma, siis ole valmis v\u00e4lja k\u00e4ima kuni <strong>25 000\u20ac<\/strong>!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Mis siis teeb Wagyu veiseliha gurmaanide seas nii hinnatuks?<\/h2>\n\n\n\n<p>Siin on 4 asja, mida sa v\u00f5iksid teada Wagyu liha kohta:<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">1. Wagyu liha erakordne maitse<\/h3>\n\n\n\n<p>Wagyu liha hinnatakse eelk\u00f5ige tema <strong>\u00f5rna mahlase maitse t\u00f5ttu <\/strong>\u2013 selleks, et selline rikkalik maitse saavutada, toidetakse looma spetsiaalsel j\u00f5us\u00f6\u00f6dal (riis, mais ja hernes) ning selleks ajaks, kui loom on s\u00f6\u00f6misk\u00fcpseks saanud, on rasvasisaldus tugevalt \u00fcle 20%, ning v\u00f5ib ulatuda lausa <strong>50-ni%.<\/strong> <\/p>\n\n\n\n<p>K\u00f5rge marmorsus ehk peenelt lihaskudede vahele tikitud rasvakoed ongi p\u00f5hjus, miks Wagyu liha vajab k\u00fcpsetamisel ainult soola ja pipart. V\u00f5i-laadse pehmusega tekstuur ja maitse esineb selles lihas loomulikult. Kes Wagyu liha kord on proovinud, see teab, et k\u00f5rge marmorsusega, mahlane ja elamusterohke liha on p\u00f5hjusega hinnalisem.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">2. Wagyu liha sertifikaadid ja standardid<\/h3>\n\n\n\n<p>Selleks, et hoida Wagyu liha k\u00f5rgeid standardeid, on Jaapanis liha <strong>rangelt reguleeritud<\/strong>. B-kategooria jaoks 69-72% ja C-kategooria lihal on see n\u00e4itaja alla 69% kogu looma massist.<\/li>\n\n\n\n<li><strong>Liha marmorsus<\/strong>.<br>Seda hinnatakse madalast kvaliteedist (1) k\u00f5rge kvaliteedini (5).<\/li>\n<\/ol>\n\n\n\n<p>Huvitav on teada, et Jaapanis kvalifitseerub Wagyu tiitli v\u00e4\u00e4riliseks lihaks vaid A3 \u2013 A5 kvaliteediklassid.<\/p>\n\n\n\n<p><strong>USA\u2019s on Jaapanist veidi erinev kvaliteedihindamise juhend<\/strong><\/p>\n\n\n\n<p>Liha kvaliteeti hinnatakse visuaalselt liha marmorsuse j\u00e4rgi. Alates k\u00f5ige v\u00e4iksema marmorsusega #1 kuni v\u00e4ga tiheda ja peene marmorsuseni #12. T\u00e4pne ja reguleeritud kasvatus<\/h3>\n\n\n\n<p>Wa-gyu t\u00e4hendab t\u00f5lkes \u201eJaapani lehm\u201c ning nagu nimigi viitab, siis sellist t\u00fc\u00fcpi lehma peamine kasvatus k\u00e4ib Jaapanis. Wagyu lehmi on nelja peamist t\u00f5ugu: Kuroge, Akage, Nihon Tankaku ja Mukaku. Kuid n\u00f5udlus Wagyu liha j\u00e4rgi on niiv\u00f5rd suur, et n\u00fc\u00fcdseks kasvatatakse Wagyu lehmi ka USA\u2019s, Suurbritannias, Austraalias ning v\u00e4hem ka mujal maailmas.<\/p>\n\n\n\n<p>Loomad saavad kolm korda p\u00e4evas t\u00e4pselt reguleeritud s\u00f6\u00f6ta, mis koosneb peamiselt riisist, maisist ja hernest. <\/p>\n\n\n\n<p>2006.aastal tuli Jaapani turule ka eriti haruldane Oliivi Wagyu liha. Oliivi Wagyu lehmad kasvavad piirkonnas, kus kasvatatakse 99% Jaapani oliividest ning sealt saavad lehmad oma tavap\u00e4rasele dieedile veel lisaks m\u00e4rgatava koguse kuivatatud ja pressitud oliivikoori. Jaapanlastel on selle kohta \u00fctlemine \u201eMottainai\u201c, mis t\u00e4hendab t\u00f5lkes \u201eEt midagi ei l\u00e4heks raisku\u201c.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Wagyu kasvatamine on populaarne ka USA&#8217;s, Austraalias ja UK-s<\/h4>\n\n\n\n<p>N\u00f5udlus on kasvanud ning teised riigid proovivad Wagyu liha tippkvaliteeti j\u00e4rele teha, kuid Jaapani standarditeni nad veel ei k\u00fc\u00fcndi. Samas on n\u00e4ha paranemism\u00e4rke sertifitseerimise ja kasvatamise osas ka mujal maailmas. See aeg, kus lihapoest saab osta Euroopa p\u00e4ritolu kvaliteetset Wagyu liha, ei ole ilmselt enam kaugel. &nbsp;<\/p>\n\n\n\n<p><strong>\u00dcks suur p\u00f5hjus, mis hinna k\u00f5rgele kergitab<\/strong><\/p>\n\n\n\n<p>Hinda t\u00f5stvaks faktoriks on see, et Wagyu lehm s\u00f6\u00f6b oma elu jooksul \u00e4ra kuni <strong>5 tonni kallist j\u00f5us\u00f6\u00f6ta. <\/strong>See s\u00f6\u00f6t tuleb suures osas Jaapanisse sisse importida ning juurde tuleb maksta ka k\u00f5rged tollimaksud.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">4. Legendid massaa\u017eidest ja k\u00e4sit\u00f6\u00f6\u00f5ludest<\/h3>\n\n\n\n<p>Gurmaanide seas liiguvad jutud, et Wagyu kasvatajad joodavad oma lehmadele k\u00e4sit\u00f6\u00f6\u00f5lut ning teevad neile regulaarselt massaa\u017ei. See vastab osaliselt t\u00f5ele &#8211; on teada \u00fcks Walesi Wagyu tootja, kes t\u00f5esti annab oma lehmadele \u00f5lut maitsta ning teeb neile massaa\u017ei.<\/p>\n\n\n\n<p>Kuid \u00f5lu joomine on pigem haruldus.
